Tourtiere Australienne was started in 2009 by New Zealand born chef Don Hudson and his Quebecoise wife Melanie Des Lauriers. After moving to Australia and working in many of it’s finest Hotels and convention centers for more than 20 years, Don moved to Montreal in 2008 with Melanie whom he met in Prague whilst traveling around Europe in 1997 and married in Las Vegas in 2001.
A desire to escape the hotel scene and a craving for the tastes of home led him to the idea of bringing some of his favorite New Zealand and Australian classics like meat pies, sausage rolls and pavlova to Montreal. Don uses all his 5 star training combined with traditional recipes and local produce to create gourmet pies filled with delicious casseroles and curries made with chunks of meat and fresh vegetables, fresh herbs and spices. The pastry is hand made butter puff, made using a two day process of rolling, folding and resting, creating hundreds of layers and the delicious unique taste and texture that Tourtiere Australiennes pies have become famous for.
Tourtiere Australienne or “Ta” as it has become known (slang down under for thanks a lot) is dedicated to producing high quality comfort food with a modern twist on traditional recipes at a reasonable price.
